Strangely enough, this happy accident came about because I had a bunch of leftovers (and it was the tail end of our pay packet)…I’ve never been a fan of the old mac’n’cheese BUT this 3-cheese sauce with a kick of Pepper & Me Man Rub and some crispy bits of bacon has changed my mind…
Manly mac ‘n 3-cheese
3-4c cooked macaroni elbows
1 batch of smokey cheese sauce (recipe below)
1/2c cooked bacon bits (optional, but let’s be honest – BACON)
Throw together in a large ovenproof dish.
Sprinkle even more grated cheese over the top, if you like.
Bake at 180C until evenly heated through and top is golden with bubbly goodness.
Smokey Cheese Sauce
1T Pepper & Me man rub spice blend
2c milk, warmed
2c grated cheese (I like a mix of mozerella and aged cheddar)
1/2 block of Philadelphia cream cheese, or 1 pottle of cottage cheese
Melt butter in a saucepan.
Cook out the flour in the melted butter.
Add salt and man rub spice blend.
Add milk, a little at a time, making sure each addition is fully incorporated before adding more. Take off the heat and stir in the cheeses.
Use in Mac ‘n Cheese, lasagne, cauliflower cheese, on top of any cooked veges…
