Spiced Banana Muffins3 ripe bananas, mashed (I use up frozen over-ripe ones)2 large eggs1/2c oil1t vanilla essence1t Pepper & Me sweet grind spice blend2c self-raising flour Mix together mashed bananas, eggs, oil and vanilla.Add in the remaining (dry) ingredients and mix well.Bake at 180C for 15-20 mins.Makes approx 1 dozen standard-sized muffins.

Cauliflower Rice1 head of cauliflower1T Pepper & Me titillating tandoori paste Cut cauliflower into small florets and pulse in a food processor until you’ve achieved a ‘rice’ consistency.Heat the paste in a frying pan and add the riced cauliflower. Fry quickly to coat evenly. Best served with a homemade Lamb Saagwala. Yum!
