Lemon curd recipe

Pantry staple – Mika LOVES lemons, she’d eat them like apples straight off our tree.
This super easy recipe is ready in less than 10mins, made in one bowl and cooked the microwave!

3 eggs
1c white sugar
1c lemon juice (approx 3-4 lemons) + grated rind of those lemons
125g unsalted butter (melted)

Whisk the eggs and sugar together.
Add in the lemon juice and rind and mix well.
Cook uncovered in the microwave in 1min intervals until thickened (mine was done at approx 7mins).
