I’m not 100% sure where this cake recipe originated from but it is my go-to recipe for cake that everyone can enjoy (we have lots of friends with various allergies/intolerances, and this covers them all).
1.5c gluten-free self-raising flour
1c raw sugar
1t baking soda
1T flaxmeal (optional)
Sift all dry ingredients together in a large bowl. Make three wells. Pour oil into one well, vinegar into second, and vanilla into third well. Pour cold water over all, and mix well. Bake at 180C for approx 30mins, or until a skewer inserted in the centre comes out clean. This will make one layer.
