We celebrate everything with pancakes. It’s tradition to have as many pancakes as the year of age you’re turning on the morning of that birthday. (2 pancakes = 2years old)
1c self-raising flour
(That’s basically it. I sometimes add a tablespoon of honey, or a teaspoon of vanilla extract, to the mixture)
Whisk the milk and eggs together, then add in the flour and mix well.
Pour into a hot buttered/oiled pan on medium heat, and flip when bubbles start to appear.
Serve hot – Mika likes hers dusted with icing sugar and wedges of lemon, Lyon likes his with maple syrup and whipped cream, hubby likes his on the side of his bacon LOL
