Mexcellent Monster Burgers (with Home Fries)

1 egg, lightly beaten
1T (heaped) Pepper & Me Mexcellent paste

Combine well, and form into patties. Pan fry on a low-medium heat until evenly browned and cooked through.
We love to use Tip Top’s Brioche burger buns, loaded with smashed avo, Man Rub mayo, cheese, beetroot, lettuce, tomatoes – the works!

Man Rub Home Fries

Ingredients

Potatoes (approx 1 per person)
Butter (melted)
Oil
Pepper & Me Man Rub

Dice potatoes into large chunks. Microwave on high to par-cook (allow about a minute per potato). Set aside to cool. Toss through about a half-half mixture of butter and oil to coat all pieces of potato evenly. Sprinkle Man Rub evenly over the potatoes. Pan fry in a single layer until potatoes are cooked through and crispy on all sides.

Man Rub Mayo

When I don’t have any of Katie in the Kitchen’s Vegan Aioli on hand, I cheat and add about 1t (heaped) Pepper & Me Man Rub to approx 1c Mayo (we love Best Foods) plus a little squeeze of lemon juice or apple cider vinegar to thin it out a bit.
