Easy No-Sugar Choc Chip Cookies

Easy Choc Chip Cookies (with NO refined sugar or flour)

This recipe has been going through my test kitchen for weeks, with tiny little tweaks each time to get it juuust perfect. It now has the seal of approval from BOTH my little gremlins. They contain no refined sugar or refined flour so are secretly much better for them than store-bought cookies…PLUS…the bonus of less waste, as we bulk-buy most of our ingredients #winning

3/4c roughly chopped pitted dates – soak for 5 mins, just covered in hot water
1 large egg, lightly beaten
1/4c melted coconut oil
1T vanilla extract
1/4c almond butter
1c almond flour
1/4c coconut flour
1T psyllium husk
1/2t baking soda
1/3c roughly chopped dark chocolate

Drain dates and puree in a food processor.
Add in the egg, melted coconut oil, vanilla extract and almond butter then blend well, scraping down the sides a couple of times.
Add in the almond flour, coconut flour and psyllium husk and baking soda and pulse until it just comes together.
Add in the chopped choc and knead through until well distributed.
CHILL the dough for about an hour (this is the hardest part!)
Roll tablespoon sized balls, gently press flat onto baking paper, then bake for approx 10mins until lightly browned. Try to give them a chance to cool before digging in… Store in an airtight container in the fridge.
Hint: they taste even better chilled, from the fridge!
