Buttermilk Biscuits

Known as “scones” to us kiwis, these are the perfect accompaniment to any dish that has some kind of sauce or gravy to mop up! Or just eat them on their own with loads of butter (and jam if you like it sweet). So super easy!

1c buttermilk
1/2c melted butter (not hot)
2c self-raising flour
1/2t baking soda
pinch salt

OPTIONAL: 1/4c grated parmesan

PRO TIP: use ICE COLD buttermilk – I pop it in the freezer while I’m prepping the rest of the ingredients. This means that when you add the warm melted butter, it doesn’t “mix” through the cold liquid but creates tiny “blobs” instead, which will result in a dough that looks as if you spent the time to “cut in” the butter.

Mix the dry ingredients together in a large bowl.
(Add in parmesan here, if using).
Mix the curdled-looking buttermilk until just combined.
Knead in a floured surface until it comes together and cut into approx 6 scones.
Brush with melted butter and bake at 200c for approx 15mins, or until golden.
